The dark green, deeply savoyed leaves are perfect for adding a unique texture and flavour to a whole host of dishes and are a real treat when many vegetable sources are scarce. Baby leaves can be eaten raw and make a great addition to the salad bowl, while older leaves are great boiled or steamed.
