The pistachio and fruit simnel cake on page 19 and the blueberry hot cross buns on page 109 are my favourites! Spring is a wonderful time for rhubarb too, so if you’ve got a glut growing out of control in your garden, the rhubarb and meringue cake on page 57 and the rhubarb crumble squares on page 108 should go down a treat.
