With the new year comes new trends, and we look ahead to the trends seen in cake decorating
that we’ll be taking from 2022 and seeing lots more of in 2023. Bas relief is a classic technique that
continues to reign, and Karen Keaney shows how to take this trend to another level by keeping the
colour scheme pure white on her bird scene, for an exquisite, chic look. Illusion cakes will still be
high in favour, begging the question “is it really cake?!” from your guests, especially if you emulate
Lindy Smith’s steaming mug of hot chocolate, perfect for a wintery themed birthday. Zoe
Burmester also takes the theme of wellness on board, in the form of a very chilled sloth sitting on top
of an on trend terrazzo painted cake – a must make!
Speaking of Zoe Burmester, this issue sees the beginning of her new feature, '12 months of birthday
cakes', where she explores exactly that – each month Zoe will show a seasonal cake recipe focusing
on flavours and themes to correspond with that month, including a design idea to show how to
elevate it beyond the everyday… taking you from the bake to the finishing touch. This issue, she
starts with an orange and rosemary cake with frosty sugary rosemary and orange slices cascading
